Ingredients
• Oranges 3
• Castor sugar (caster sugar) 2-3 tablespoons
• Cinnamon 1/2 inch stick
• Star anise 1
• Cloves 3-4
Juice of ½ lemon
• Fresh red chilli 1 small
Method
Heat castor sugar with 2 tbsps water in a non stick pan on medium heat.Peel the oranges, separate segments, remove seeds and put into a bowl. Carefully grate some orange rind.
Brush the sides of the pan with wet brush so that the sugar does not crystallize along the sides of the pan. Add cinnamon, star anise, cloves, lemon juice to the orange segments in the bowl.
When the sugar turns a light golden, switch off the heat and add to the oranges in the bowl and mix. Finely chop fresh red chilli and sprinkle. Chill in the refrigerator and use as a topping for ice cream or mousse.
