Ingredients
• Coconut milk 2 1/2 cups
• Rice flour 3/4 cup
• Eggs 3
• Sugar 1/2 cup
• Scraped coconut 1 cup
• Oil 2 tablespoons
Method
Place coconut milk, rice flour and eggs in a bowl. Blend well with a hand blender. Add sugar and blend again till the sugar melts. Add one cup coconut and mix well.
Heat oil in a non-stick tawa. Pour a ladleful of batter on it and cook till the underside is covered with brown flecks. Turn over and cook the other side similarly. Make more pancakes. Keep them warm. Roll each pancake into a tight cylinder and serve warm.
